A restaurant tells a story, from threshold to plate. That narrative is built through space: the entrance that sets the tone, the lighting that tunes intimacy, the acoustics that make conversation possible, the material that gives the room its signature. We translate the restaurant's concept — fine-dining table, contemporary brasserie, destination venue — into a coherent, photogenic material language, down to the detail that travels on social feeds.
Service flow and floor plan
A room's profitability turns on precise variables: the number of workable covers without sacrificing comfort, the distance between kitchen and room, the width of service circulation, the position of the bar and stations. A plan that smooths service raises turnover without degrading the experience. We settle these operating variables at sketch stage, with the restaurateur, rather than discovering them at the first service.
Acoustics, lighting and comfort
The perceived comfort of a restaurant rests on often-neglected parameters: controlled acoustics that absorb the din, lighting worked zone by zone that flatters both guests and dishes, a colour temperature that extends the evening rather than closing it. These settings are designed upstream, since they depend on materials, ceilings and light sources — hard to correct once the room is delivered.
Materials that withstand intensive commercial use
A dining room takes intensive, constant use: floors walked all day, surfaces cleaned several times daily, seating worked at every service. We select professional ranges validated for durability — not residential materials that age within a season — so perceived quality holds until the planned amortisation.
Bespoke joinery: a room's signature
A restaurant's furniture and cabinetry often carry its identity: built-in banquettes, the bar, panelling, screens, counters. Our bespoke woodwork and joinery, built in our integrated Casablanca workshop, lets us draw these pieces within the project and then build them exactly as drawn — a decisive advantage when the cabinetry is the visual signature of the space. Loose furniture is designed bespoke, then produced with furniture workshops selected for the project's standard.
Our method: design, procurement & site supervision, turnkey delivery
AMARGUS structures every restaurant project in three connected phases, with validation milestones at each stage:
1. Design — Concept and positioning defined with the restaurateur, floor plan and flow study, material, furniture and lighting selection, bespoke cabinetry drawings, an approved design package before works.
2. Procurement and site supervision (OPC) — Sourcing and negotiation of furniture, equipment and materials, trade coordination, schedule management, on-site quality control at every critical phase.
3. Turnkey delivery — Snagging, installation of furniture, lighting and signage, handover of a room ready to open.
This sequencing gives the restaurateur clear budget and schedule visibility, essential when an opening date is already committed.
Restaurant, hotel, brand space: one standard
The restaurant is among the sectors the studio masters, alongside hotel projects in Morocco, where the dining room and F&B spaces answer to the same principles of experience and operation. This practice of public-facing venues — flow, acoustics, durability, identity — directly serves every restaurant project, from concept to handover.
Depending on surface area, the extent of works and kitchen complexity, a full project — from design to opening — typically spans 5 to 12 months. A build in a bare unit takes longer than reworking an existing room. Every project is planned individually.
We design the dining room, bar, entrance and circulation, and coordinate the integration of technical spaces and the professional kitchen with the relevant specialists and suppliers, so the whole works as one coherent system.
The scope is chosen: design only (concept, plans, materials, furniture), site supervision, or turnkey including full procurement and handover of a room ready to open. We frame this scope with you at the first consultation.
Yes. These projects require specific phasing to limit interruption to trading, planned from the design stage with the restaurateur according to the venue's constraints and the commercial calendar.

Our studio is based in Casablanca and delivers most of its projects there, but we support restaurants in other Moroccan cities depending on the nature of the project and the agreed site-supervision arrangement.
